The Total Polyphenols for an EVOO should be 500mg or Higher. The reason being any low amount wont produce the healthful results we are looking for, basically being ineffective. This is why its important to consume an EVOO with a minimum of 500mg/kg of Polyphenols and 100mg minimum of Oleocanthal.
